1 1/2 lb / 750 grams of apples (cooking or eating apples, or a mixture of both)
3 lb / 1,300 grams of white granulated sugar
8 fl oz / 250 ml of tap water

Method - What To Do


Wash all of the cranberries and place into a deep, wide pan with the water. Peel the apples, remove their cores and then slice them, adding them to the pan with the cranberries. Simmer the fruit for around 15 minutes, so that it becomes soft and tenderised.

Photo of CranberriesRemove the saucepan from the cooker heat and stir in the sugar. Stir well so that the sugar dissolves into the fruit juices. Once all of the sugar has been successfully dissolved, place the saucepan back onto the cooker and allow the mixture to boil strongly for ten minutes, stirring as much as required to prevent the possibility of sticking and burning.

Test for jelling, by spooning out a small amount of the mixture and dripping it onto a plate that has come from a fridge or freezer. If setting point has been reached, the apple and cranberry jam will begin to set and a skin will form. If a setting point has not been reached and the jam appears too runny, then simmer some more and test again in this manner.

Once you know that your fruity preserve is ready to set itself, remove the pan from the heat and leave to cool down for around 15 minutes, so that it thickens slightly. By cooling the mixture, the fruit will be better distributed in the jam, as opposed to floating on the top of the jar, or perhaps sinking to its bottom. Using a metal spoon, skim off any scum and then ladle into glass jars (these must be completely sterile).
