How To Make Apple, Cherry and Gooseberry Jam

1 lb / 500 grams of cooking apples
4 lb / 1,800 grams of white sugar
1/4 oz / 7 grams of tartaric acid (alternatively use the juice of 1/2 large lemon or 1 lime)

Method - What To Do


Wash all of the fruit and dry. Pick the stalks from the cherries and remove their stones, placing these pitted cherries into a saucepan. Top and tail the gooseberries and add these to the same pan. Next, peel and core the apples, before dicing them into small cubes and tipping them into the pan. Heat gently, stirring occasionally, and just as the mixture is approaching a simmer, mix in the tartaric acid (or lemon juice).

Photo of GooseberrySimmer for around 25 minutes, to soften the apples, cherries and gooseberries. Stir periodically to prevent sticking and potential burning. Take the saucepan off the heat and mix in the white sugar. Stir in the sugar so that it dissolves, taking care not to break up the pieces of fruit too much.

When no sugar remains, return the sauce to the heat and bring to a strong boil, allowing the boil to continue for between ten and 15 minutes, until jelling consistency is achieved. During this boiling, keep scraping the bottom of the pan with a flat edged wooden spatula or similar spoon, so that the mixture does not catch.

Photo of Cider ApplesTest to see if the setting point has arrived. This is most easily done by using a chilled saucer or dish. Dribble on a small amount of your newly made apple, cherry and gooseberry jam, and leave for a minute. After this time has passed, touch the jam to see if it has started to become a jelly, with a skin and wrinkles when you run your finger through it. If it is ready to set, then remove the pan from the heat. Otherwise, simmer and test some more.

When a good jelling point has been reached, leave the jam to cool for 15 minutes, skim off any scum, and spoon into sterile jars in the usual way, topping with discs of wax paper if available.
