How To Make Apricot and Chilli Jam

Ingredients: Apricot and Chilli Jam Recipe

2 lb / 1,000 grams of white sugar
8 1/2 fl oz / 250 ml of tap water
3 or 4 red chillies (or more, according to taste)
1 small lemon
1/2 oz / 15 grams of butter or margarine

Method - What To Do


Wash and dry all of the apricots, before cutting in half and removing the stones from the centre. Slice the fruit into smaller pieces and add to a saucepan, along with the zest and juice of one lemon, the white sugar and the 250 ml of water.

Photo of ChilliesFinely chop all of the chillies (or blend into small pieces in a food processor). Add the chopped chillies and their seeds into the saucepan and mix together with the apricots, before placing on a low heat. Mix gently until all of the sugar has dissolved and allow the jam mixture to boil strongly for a few minutes.

Reduce the heat to a simmer and leave to thicken for 15 to 20 minutes, stirring during this time so that the mixture doesn't burn at all. When stirring, be careful that the fruit doesn't fall apart too much, unless you prefer a smoother jam, rather than a chunky one with pieces of fruit.

Your apricot and chilli jam should now be approaching its setting point and so should be tested. Using a teaspoon, remove a spoonful of the syrup and drop this onto a saucer (chilled in a freezer or refrigerator) to see if it starts to set. Check after a minute and if a skin hasn't yet formed, continue the simmering and saucer testing. If the jam feels like a soft jelly and has started to form a thin skin, remove the pan from the heat, mix in the butter to disperse any froth, cool for 15 minutes and fill your glass jam jars (sterilised in advance).
