Method - What To Do


This may be an unusual jam, but it is really worth making if you are partial to bananas. The flavour is excellent and the preserve has many uses, being perfect on hot toast when spread with peanut butter. Alternatively, you could heat it up and drizzle it over a vanilla ice cream sundae for a banoffee taste. Since bananas are a good source of natural pectin, this jam will usually set very easily. The addition of a handful or two of sultanas would certainly create a pleasing result.

Place the sliced bananas into a large, deep saucepan and combine with the white sugar (ideally this should be granulated sugar), the water and the cinnamon powder (or cinnamon sticks, to taste). Squeeze over the juice of one lemon and cook the mixture on a low heat, stirring well to make sure that all of the ingredients combine and the sugar dissolves before it starts to bubble.

Allow the mixture to boil for a few minutes and then reduce to a simmer for 15 to 20 minutes, until the sauce thickens and takes on a darker, browner colour. During this time, keep stirring to prevent the mixture catching and potentially burning, which would spoil the flavour and ruin the jam.

Photo of CinammonTest the banana mixture to see if it is ready to set. This can be done by placing a small portion of the jam onto a plate or spoon that has been previously chilled in a freezer. If it quickly forms a soft skin and ripples when poked, you will immediately know that your jam will set and should be removed from the heat. If it remains a little on the runny side, simmer for a few more minutes and re-test, repeating this process until you reach a good setting point.

Take the saucepan off the heat and ladle straight into clean, sterile jars, sealing with wax circles before the lids are tightly screwed on.
