1/2 lb / 250 grams of sugar (granulated is preferable)
2 bay leaves
1 stem of freshly picked rosemary
4 fl oz / 120 ml of balsamic vinegar
3 tablespoons of white wine (possibly more, according to taste and the actual flavour of the wine itself)
1 tablespoon of malt vinegar
1 teaspoon of salt
1 tablespoon of olive oil

Method - What To Do


Often referred to as onion marmalade, this tasty savoury jam can frequently be found on the side of a salad or topping a burger. Onion jam is also the ideal accompaniment to many a cheese dish, such as cheese on toast or simply crackers and soft cheese. If you are a lover of garlic, then you might like to add in a chopped clove or two, or maybe more, depending upon your palate.

Photo of More OnionsPour one tablespoon of olive oil into a large frying pan and turn on the heat to a medium temperature. Finely chop the four large onions and transfer them to the frying pan. Fry the chopped onions for around ten minutes, or until soft and starting to brown - not burn.

Add in the two bay leaves and the fresh rosemary (chopped), as well as all of the salt and the white sugar. Continue to cook the onions, stirring well to encourage the sugar to melt and dissolve, so that the jam mixture will caramelise. Turn up the heat slightly and pour in the white wine, the balsamic vinegar and the tablespoon of malt vinegar. Allow the onion jam to simmer for roughly 15 minutes, or until a sticky consistency and texture is present in the pan. Keep stirring during this time, to prevent any sticking and burning on the base of the frying pan. The onions should now be an attractive golden brown colour.

Spoon the onion mixture into sterile jars and store in the fridge, as this savoury jam has a fairly short shelf life and should ideally be eaten within a couple of weeks. For a different flavour, consider substituting the rosemary with either parsley, sage or thyme, or a mixture of these flavoursome herbs.
