Photo of Champagne1 bottle (25 fl oz / 750 ml) of champagne or sparkling wine
2 tablespoons of white wine vinegar
1 3/4 lbs / 800 grams of white sugar
2 oz / 55 grams of dry pectin or similar gelatin-type setting agent

Method - What To Do


This luxurious jelly makes the perfect talking point at a dinner party and creates a refreshing clear jelly. It can be made using either sparkling wine or champagne, as your budget dictates.

Pour the whole bottle of champagne into a large saucepan, adding in the sugar and the vinegar. Move the pan onto a medium heat and gradually begin to bring this mixture to a simmer, stirring to ensure that the sugar crystals are fully dissolved. Increase the temperature so that the champagne begins to boil and mix in the dry pectin sachet.

Boil and stir the mixture for a full minute and remove the jelly from the heat. Using a clean ladle, transfer the jelly mix into sterilised glass jam jars, filling the jars right up to the top and covering with wax discs, facing the wax side downwards.
