How To Make Cherry and Loganberry Jam

Method - What To Do


Examine all of the loganberries and cherries, picking off any remaining stalks and discarding any fruit that is obviously very hard and underripe. Place all of the loganberries into a deep saucepan and then stone the cherries, adding them to the saucepan as well. Crack some of the cherry stones to reveal their kernels and mix these in, as these will provide a pleasant almond-like background flavour.

Photo of LoganberriesPour on the water and the juice of two lemons, and bring the mixture to a boil, simmering for approximately 15 to 20 minutes, or until the fruit has become tender and is beginning to break apart. Take the saucepan off the heat and mix in the white sugar. Mix this in well and keep mixing gently, until you can clearly see that there are no crystals visible, meaning that it has fully dissolved into the cherry and loganberry juices.

Bring the mixture to a rolling boil and keep it boiling for between 15 and 20 minutes, or until you feel that a good setting point has been finally reached. Keep stirring well during this boiling period, to avoid any burning on the saucepan's base. Test the jelling potential by extracting a small amount and placing it onto a plate (this should have been previously chilled). If it begins to show signs of setting potential within a minute, forming an obvious skin and rippling when touched, you will know that a good setting point has been found. If this is not happening, then boil some more and re-test as many times as you need to, until you are happy with the results of your final setting test.

Take the saucepan off the heat and then let it cool down for ten minutes or so. This will allow the jam to become a little thicker, meaning that the fruit pieces and seeds will end up being better distributed within the jars. Skim off any scum and then bottle into your nicely prepared glass jars (washed, dried and sterilised just beforehand).
