How To Make Date and Carrot Jam

Ingredients: Date and Carrot Jam Recipe

2 lb / 1,000 grams of white sugar (granulated is best for all jam jam making recipes)
1 large carrot
12 fl oz / 350 ml of tap water
Almond essence (this flavouring is option)

Method - What To Do


Chop the dates in half and remove their stones. Peel the carrot and slice into chunks. Mince the dates and carrots, or blend them into small pieces using a food processor.

Photo of CarrotsAdd the minced carrot and dates to a suitably large saucepan and cook with the measured 350 ml of water. Allow the mixture to simmer strongly for 20 minutes, stirring a little during this period of simmering.

After briefly removing the saucepan from the heat, stir in the sugar until it has dissolved and add five or six drops of almond essence. Bring to the boil once more and leave on a rolling boil for 15 minutes, taking special care that it doesn't stick or burn on the sides or base.

Photo of DatesBy now, your hot date and carrot jam will be approaching its setting point. Test to see if it has been reached by dripping some onto a cold plate from the freezer or fridge. After a minute, tilt the plate at an angle to see if the jam runs or has started to set. If it remains runny, without a skin, boil some more and test as many times as you need to, until you are quite sure that a good set has been reached.

Take the jam off the heat and then mix in a small amount of butter, to help any scum disappear and disperse. Leave the mixture to cool for 15 minutes, so that it begins to thicken, and ladle into glass jars that have just been boiled or baked in a hot oven, to sterilise.
