Method - What To Do


This is a really simple recipe for gooseberry jam, with equal quantities of fruit and sugar. This means that if you wish to make a larger quantity, then it is just a case of using the same amount of fruit with the same amount of sugar, adjusting the volume of water and lemon juice accordingly.

Top and tail all of the gooseberries ensuring that wastage is kept to a minimum. Place the trimmed fruit into a good-size saucepan, along with the water. Squeeze on the juice of the 1/2 lemon and mix in with a wooden spoon or spatula. Place the pan on a low heat and stir gently, allowing the mixture to simmer for around ten to 15 minutes, until the gooseberries have become soft.

Remove the pan from the heat and add the sugar, stirring well to help the sugar dissolve. Return the pan to a low heat. It is important not to let the mixture boil again, until you are completely sure that there are no sugar crystals remaining. Once no sugar crystals remain, increase the heat and boil the gooseberry jam for ten minutes. Stir as necessary, to prevent any of the syrup mixture burning on the bottom of the saucepan.

As the gooseberry jam mixture begins to approach its setting point, it will change to a noticeably pinky colour. Carry out a simple setting test, spooning a small amount onto a chilled plate to see it if starts to set and 'wrinkle' when touched (after approximately one minute). If you feel that the jam is not ready to set, then place it back onto the heat and simmer for a few more minutes, testing again. Repeat this process until you find that the jam has achieved its setting point.

Take the pan off the heat and spoon off any scum that has appeared. Allow the mixture to cool for a few minutes before carefully spooning your gooseberry jam into freshly prepared glass jars (fully washed and sterilised).
