When autumn begins to make itself known and temperatures cool down, vegetable gardeners often find that their tomato plants are left with lots of green, unripened fruit. This is why this particular savoury jam is so popular, as it minimises wastage at harvest time. If a more chutney like flavour and appearance is required, add in a fried chopped white onion and a couple of tablespoons of malt vinegar, and possibly a handful of chopped sultanas.

Photo of Green TomatoesChop all of the green tomatoes into small pieces, or alternatively, roughly blend in a food processor. Add the tomato pieces to a big saucepan, layering with the sugar, and leave this mixture to stand overnight. The following day, finely chop one of the lemons and add this to the mixture, together with the juice of the other lemon, the grated fresh ginger and the cinnamon stick. Before adding the vanilla bean, the pod should first be finely chopped into tiny pieces. It can then be mixed in evenly, without the possibility of strong pockets of flavour.

Place the saucepan and its green tomato mixture on a low heat and begin to gently stir, to encourage the sugar to dissolve. Do not let the mixture boil until you are 100% sure that there are no actual sugar crystals remaining (roughly ten to 15 minutes).

Allow the jam mixture to boil until the pan has been simmering on the heat for at least an hour in total. During this time, keep stirring the mixture to avoid it burning on the bottom. Be sure to stir carefully, so that any remaining pieces of tomato are less likely to disintegrate.

When the green tomato jam appears to have cooked and thickened, take the saucepan off the cooker and remove the cinnamon stick. Allow the mixture to cool for roughly 15 minutes and spoon into prepared glass jars (sterilised the same day).
