1 handful of fresh or frozen raspberries
1 packet of raspberry flavoured jelly (roughly 135 grams)

Method - What To Do

This is an unusual recipe combining savoury green tomatoes with a raspberry jelly mix, to create a good set and jam-like consistency.

Photo of RaspberryWash all of the green tomatoes and then blend then in a food processor, chopping them into tiny pieces. Place the tomatoes in a saucepan and bring them to a boil. Simmer for 15 minutes before removing from the heat, to stir in the sugar. Add the raspberry gelatin, the raspberries and the juice from one small lemon, and return the pan to the heat, simmering for an additional 15 minutes. Stir well during this cooking time, to prevent the jam catching on the bottom of the pan.

After this period, the green tomatoes and raspberry jam should have started to reduce and thicken. Take the pan off the heat, skim off any floating and unsightly froth, and pour straight into glass jars that have just been thoroughly washed and sterilised. The raspberry flavoured gelatin will ensure a reliable set. Of note, this recipe can also be successfully frozen if required.
