Method - What To Do


For a slightly more unusual tropical jam, kiwi fruits provide an interesting texture and grape-like flavour.

Cut the kiwi fruit in half and scoop out all of the flash, discarding the skin. Mash or chop the fruit into small pieces and place into a large saucepan. Mix in all of the white sugar, as well as the juice of one large lemon.

Slowly bring the jam mixture to a gentle simmer, stirring until there are no traces of any sugar crystals. At this point, increase the heat slightly so that the kiwi fruit begin to boil. Continue boiling and stirring for around ten minutes, or until the mixture has started to thicken up in consistency.

If you feel that the kiwi jam is now ready to set, test it by putting a small amount on a plate (previously chilled in a freezer for a few minutes). If the mixture quickly firms up and begins to form an outer skin, not running when the plate is tipped at an angle, your jam is ready to be spooned into jars (previously cleaned and sterilised just before). If the mixture appears too runny and has not yet reached its setting point, simmer the kiwis for a few further minutes and test again, repeating this test as many times as necessary until the jam is ready to properly set.
