Method - What To Do

Scrub the skins of the lemons and limes, before cutting them into halves and squeezing their juice into a pan. Save all of the pips and any pith, and place this into a muslin bag. This will add some additional pectin when cooked with the marmalade, and being contained in a bag, will be simple to remove later. Pour in the measured out water and then turn your attention to the remaining citrus skins.

Photo of LimesCut the halved lemon and lime skins in half once more, and then finely shred the skins into small pieces. Add any pith to the muslin bag and tie the top tightly, so that none of the pips or pith pieces will escape into the mixture. Add the shredded rind to the saucepan of water and juice, and boil uncovered for around one and a half hours. After this cooking time has passed, you should find that your shreds of rind will be completely soft.

Take out the muslin bag of pips and pith, and give this a good squeeze so that the maximum amount of pectin and flavour is released into the marmalade. Remove the saucepan from the heat and stir in the sugar. Keep stirring until all of the sugar dissolves, and then bring the lemon and lime marmalade to a strong boil for 15 minutes. After this time, test a spoonful of the syrup to see if it is ready to set, placing it onto a frozen plate and leaving it for a minute to see whether or not a skin forms and wrinkles when it is touched. If you feel that your marmalade would benefit from a little further boiling, then cook for a few minutes longer and re-test by using this method.

Take the pan off the heat for the last time, skim off any persistent scum, and then leave the marmalade to cool and thicken for ten to 15 minutes. This will result in a better distribution of the shreds of rinds, as they may well float to the top if the mixture is too hot and runny. After this short period, mix thoroughly and then spoon straight into sterile jam jars and wait patiently until breakfast time the following day.
