Method - What To Do


Wash all of the citrus fruit well, scrubbing the skins to remove any waxy coating, and then peel off the skins. With a chopping knife, finely shred the lemon and tangerine skins and place these into a saucepan, pouring on all of the water (roughly 3 1/2 pints of water). Collect any discarded pith and pips, and place these into a muslin bag (this provides extra pectin), tying the top securely. Place the muslin bag in the saucepan.

Photo of TangerinesRoughly chop the flesh of the tangerines and lemons, and add these pieces of fruit to the pot. Bring the mixture to a strong boil and leave to simmer for roughly one hour and 30 minutes, so that the fruit pulps, the shredded rind softens and the overall volume of marmalade mixture roughly halves. Stir well during this lengthy cooking time. Take the pan off the heat and remove the muslin bag, squeezing it tightly to make sure that all of its pectin-rich juices are thoroughly extracted and not wasted.

Add the white sugar and stir this in well, so that it dissolves. When all of the sugar has vanished into your lemon and tangerine mixture, bring this marmalade to a strong boil for ten minutes and then test to see if it is ready to set. Do this by spooning a little marmalade onto a cold plate. When a minute has passed, examine this sample to see if it is setting. Tilt the plate and check if it runs, touch the surface and see if it feels like a soft jelly, with a wrinkly skin. If it doesn't pass your tests, boil it further and keep testing accordingly.

Allow the lemon and tangerine marmalade to cool down for 15 minutes. It will still be hot, but will have started to thicken during this time, meaning that the shredded rind will be better distributed in the jars and less likely to rise to the surface or sink. Before spooning into hot jam jars (sterilised in boiling water, a dishwasher or a hot oven), skim off any impurities that have form a surface scum. Top the surface of each jar with a wax disc and then immediately screw on the lids.
