How To Make Mango Chutney

Ingredients: Mango Chutney Recipe

7 oz / 200 grams of brown sugar
6 fl oz / 180 ml of white cider vinegar
3 1/2 oz / 100 grams of finely chopped fresh ginger root
3 1/2 oz / 100 grams of raisins
2 large white onions
4 tablespoons of olive oil
1 teaspoon of dried chilli flakes
3 teaspoons of ground coriander
1/2 teaspoons of cayenne pepper or white pepper
1 teaspoon of ground turmeric
1 teaspoon of curry powder (optional)
1 teaspoon of mustard seeds (optional)
1 teaspoon of ground cloves (optional)

Method - What To Do


The perfect accompaniment to poppadoms and onion bhajees, homemade mango chutney is not as complicated to make as it first appears, and is well worth the effort.

Photo of MangoesAfter peeling all of your mangoes and removing the stones, chop the flesh into small pieces and place to one side. In a deep frying pan or typical jam making saucepan, add the olive oil, the chilli flakes and the two white onions (chopped). Cook for around five minutes, so that the chopped onion begins to fry and soften. Next, add in the ginger and the mango pieces, and cook the chutney for a further five minutes.

Remove the frying pan from the heat and stir in the sugar, the white cider vinegar and the raisins. When all of the sugar has dissolved, add the ground coriander, cayenne pepper and turmeric, and the optional curry powder, mustard seeds and ground cloves, and cook the mango mixture for around 30 minutes. Taste the chutney during this period of simmering and season with salt and pepper to suit your taste buds. Add a little water or a glug more vinegar if the mixture appears too dry, or place a lid on the pan to reduce the evaporation.

After 30 minutes of simmering, your mango chutney should appear thick and syrup like. Cool for ten minutes before transferring the hot chutney into sterile jam jars. Although it will be set and ready to eat the next day, it will taste even nicer if it is allowed to mature over the following few weeks.
