Method - What To Do


A large mulberry tree can produce quite a crop of fruit during the summer. Rather than leave all of the berries to fall or be eaten by blackbirds, there are numerous recipes that you can make use of, with mulberry jam being arguably amongst the best.

Give the mulberries a light rinse and pick off any remaining stems. Then transfer all of the berries to a big saucepan and simmer them for 15 minutes, stirring them quite roughly to encourage the fruit to break up. If necessary, give them a quick mash to help release more of the juices.

After 15 minutes of simmering, the mulberries should have been suitably softened. Take the pan off the heat of the stove and mix in the weighed-out amount of white sugar. Keep mixing until this sugar has been fully combined and dissolved, and then bring the jam mixture to a stronger boil, leaving it to boil in this way for 10 to 15 minutes, or until you are confident that a setting point has occurred.

Test for jelling by spooning some of the mulberry syrup out of the pan and onto a plate that has previously been thoroughly chilled. After a minute, tilt the plate to a strong angle to see if the jam is setting or runs. Run your fingertip through the mulberry syrup to see if it wrinkles, indicating the formation of a skin. If your jam fails these tests, boil for a little longer and then test again, repeating this cycle as many times as required.

Take the pan off the cooker and allow to cool for a few minutes, skimming the surface to clean off any scum. By now, your glass jars should be fully sterilised and still be hot, and so you should then spoon the mulberry jam straight into these hot jars, quickly covering the surfaces with waxed paper before screwing the lids on very tightly.
