Ripe and juicy Victoria plums are the perfect fruit to use when making this jam, and since they spoil so quickly in hot weather, this recipe is a good way to preserve the fruit so that it can continue to be enjoyed long after harvesting the plums.

Photo of GingerCut all of the plums into halves and remove the central stones, adding all of this prepared fruit to a large saucepan. Mix in the white sugar and cover with a saucepan lid. Leave the plum and sugar mixture for several hours or longer (overnight if possible). This will allow the sugar to soak up the juices of the plums and therefore firm up the fruit whilst dissolving some of the sugar crystals.

Add the four teaspoons of ground ginger to the mixture, as well as the juice from one lemon. Place the saucepan on a low / medium heat and gently stir the plum mixture, to assist with the dissolving of the sugar. As soon as the last crystal of sugar has dissolved, raise the heat slightly and bring the jam to a boil for around ten minutes, or until the mixture begins to thicken and obtain a gel-like appearance.

Take the saucepan off the heat and test the plum mixture to see if it has attained its setting point. The correct consistency of the plum jam is most easily tested by placing a small quantity onto a cold plate (chilled earlier in a freezer). If the mixture quickly firms up and obtains a skin, creasing when touched with a finger, the jam is ready to be transferred into the prepared glass jars (sterilised prior to this process). Otherwise, the saucepan should be placed upon the heat once more, further simmered and tested again, until setting point has been successfully reached.
