3 1/2 oz / 100 grams of brown sugar
6 fl oz / 180 ml of red wine vinegar
Salt (to taste)
1 oz / 30 grams of butter (or alternatively you can substitute olive oil instead)

Method - What To Do


There are many ways that this savoury jam recipe can be successfully modified. Optional extras include the addition of lemon rind, sultanas, garlic, a glug or two of red or white wine, herbs (rosemary, sage or thyme perhaps) and chopped nuts, amongst many other possible ingredients.

Photo of Red OnionsSkin and slice all of the red onions into halves, and then finely slice each half. Fry the slices of onion in a frying pan, using the butter or olive oil. Add a pinch of salt and cook on a medium heat for around 15 minutes, or until the onions are softened and beginning to brown - not burn.

Stir in the sugar and cook the red onion jam for a further five minutes, so that all of the sugar is properly incorporated and completely dissolved. Add the red wine vinegar and bring the pan to a quick boil, before reducing the heat to a simmer for around 20 minutes, to allow much of the moisture to evaporate and concentrate the flavours.

When your jam becomes sticky and takes on the appearance of a thick chutney, it will be ready to spoon into glass jars, sterilised in advance. This chutney will keep for several months when stored in a cool, dark cupboard, or even longer in a fridge.
