1/2 lb / 250 grams of red chillies
2 1/2 lb / 1,150 grams of white granulated sugar
17 fl oz / 500 ml of white wine vinegar
1 lemon
1 sachet of pectin powder (approximately 2 oz / 55 grams, or similar setting agent. Always read the instructions on the package, as the exact quantities can vary. Alternatively, use special jam sugar with added pectin, available from many supermarkets)

Method - What To Do


This red chilli jam may be sweet, but it is best treated as a savoury accompaniment to a meal, such as classic sausage and mash, a ham salad or a chicken sandwich. Alternatively, if the jam is warmed through to make it running, it makes a tasty, spicy dipping sauce for Chinese spring rolls or tempura-style battered prawns.

Photo of ChilliesWash and dry the red peppers and chillies. Roughly cut the red peppers and chillies, removing all of the seeds from both, as well as the stalks. Place the vegetable pieces into a food processor and quickly blend so that you are left with finely chopped peppers and chillies.

Pour the vinegar into a saucepan and combine with the juice of one lemon. Add the white sugar and slowly warm the pan up, allowing the sugar to naturally dissolve with minimal stirring. As soon as the pan starts to boil, scrape the pepper and chilli pieces out of the food processor bowl and into the saucepan liquid. Leave on a rolling boil for around ten minutes and stir during this time. Take off the heat and add the pectin powder, boiling for another minute or two once mixed in (according to the instructions on the pectin sachet).

Leave your red chilli jam to cool down for roughly half an hour, so that the pieces of peppers and chillies will be more evenly distributed in the mixture, rather than sinking to the bottom or sitting on the top. Stir the jam one last time and then spoon the thickened mixture into sterile glass jars.
