Ingredients: Red Wine Jelly Recipe

1 1/2 lb / 750 grams of white sugar
1 lemon
1 sachet of pectin powder (around 2 oz / 55 grams - as per the instructions on the packet)

This is an incredibly quick and easy way to make a jam-like jelly that feels really luxurious, and a little bit naughty. It is a useful way to use up some leftover wine after a dinner party. If you have roughly half of bottle of wine going spare, then simply half the recipe. Red wine jelly is a very tasty accompaniment to evening cheese and crackers, or as an indulgent topping to a croissant or similar pastry. The jelly also makes an unusual present, especially when the jar is decorated with an attractive label and topped with a bow.

This recipe can easily be 'tweaked' according to your taste. Possible additional ingredients include spices, chopped cranberries and grated carrot.


Pour the wine into a large saucepan and combine with the juice of one lemon. If you would like 'bits' in your jelly, you may like to add in the zest of the lemon before it is juiced. Stir in the sugar and the pectin powder (or other setting agent), and stir until the sugar and pectin have completely dissolved.

Remove the pan from the hob heat and allow to cool for a few minutes. During this time, skim off any froth or scum that has formed on the top of the red wine liquid, and then pour your newly created jelly into hot jars (freshly sterilised), ready to set.
