How To Make Rhubarb and Strawberry Jam

2 lb / 1,000 grams of white granulated sugar
1/2 lemon (or one small lemon)

Method - What To Do


Wash all of the rhubarb stems, so that any garden soil has been removed, drying thoroughly before trimming the ends. Cut the rhubarb into small pieces and place in a large metal saucepan, together with the sugar and the juice of half a lemon.

Photo of RhubarbRemove the green leaves from each of the strawberries and if possible, avoid washing the fruit. If it is necessary to wash the strawberries, pat them dry with a towel or kitchen tissue, to avoid adding in extra moisture. Add the strawberries to the saucepan and place on a low heat, to encourage the sugar to dissolve into the juices. Rather than stirring the mixture, shake the pan every now and then, so that the fruit does not start to disintegrate (unless you are trying to make a smooth jam). The aim is to dissolve the sugar without destroying the fruit, so that chunks remain in the finish product.

When you are happy that all of the sugar has vanished into the mixture, increase the heat so that the rhubarb and strawberry jam begins to boil. It is important to stir the bottom of the mixture at this stage, so that it doesn't stick or begin to burn. Simmer the mixture for between 15 and 20 minutes, or until it begins to appear more like a thick syrup.

When you feel that your jam has reach its setting point, spoon a small amount onto a cold plate (preferably placed in a freezer at the start of the jam making) to see if a skin quickly forms and a jelly like appearance is achieved. If not, continue to simmer the jam and test again in this way a few minutes later. If any lumps of fruit remain and you prefer a smoother consistency, simply mash the mixture a little until it reaches your desired texture.

When your rhubarb and strawberry jam is ready to set, spoon the mixture into glass jars that have recently been sterilised.
