How To Make Spiced Apple Jam

Ingredients: Spiced Apple Jam Recipe

1 lb / 500 grams of eating / dessert apples (such as Cox's, Gala or Granny Smiths)
1 lb / 500 grams of white granulated sugar
17 fl oz / 500 ml of tap water
1 orange
1 teaspoon of grated nutmeg (alternatively you can use cinnamon instead)
1/2 teaspoon of Allspice powder
10 cloves (depending upon taste)
5 bay leaves (freshly picked or dried)
100 ml of cider vinegar (this is a good source of pectin)

Method - What To Do


Wash all of the apples well, before peeling them. Slice the apples into small cubes and remove the central core. Place the apples into a large saucepan and mix with the zest of one orange. Squeeze the juice of the orange over the apples and incorporate the white sugar, the grated nutmeg (or cinnamon), the Allspice powder, the cloves and the bay leaves. Pour on the 500 ml of water and the 100 ml of apple cider vinegar, and place the saucepan of spiced apple jam mixture onto a low heat.

Photo of ApplesStir the mixture as it starts to warm through, to encourage all of the sugar to dissolve. Before you allow the apples to start boiling, all of the sugar should be completely gone. Start boiling the mixture for a minute and then reduce the temperature to a lower heat, so that the jam can begin to simmer away.

Gently simmer for around 30 to 45 minutes (or slightly longer), until the mixture becomes thick and sticky. During this time, don't stray far, as it will need to be stirred every few minutes, to prevent the possibility of burning at the base of the jam mix.

Test your spiced apple jam to see if it has reached setting point using the cold plate method (place a small amount of the apple mix onto a chilled plate to see if it quickly gains a jelly like consistency). If the mixture appears to be too runny, continue to simmer until this setting test succeeds. Then, allow the jam to cool for 15 minutes (or thereabouts) and transfer into your freshly sterilised glass jars.
