Ingredients: Tea Jelly Recipe

1 lb / 500 grams of sugar
10 to 12 tea bags
1/2 lemon (this is optional)
1 sachet of pectin powder (usually 2 oz / 55 grams - always follow the instructions carefully to ensure a good set)

This unusual jelly will vary greatly in taste, depending upon the actual strength of the infusion and the variety of tea leaves used. For example, Earl Grey will result in a more perfumed tea, while a typical supermarket brand will be less subtle in flavour and less aromatic. To add further flavour and acidity, a little lemon juice is worth considering, or perhaps some blueberry or cranberry juice from a fruit juice carton.

Boil the water and pour into a large saucepan. Add the tea bags and stir around for a minute, and then leave for between 30 minutes and an hour. After this time, remove all of the bags and add the sugar, stirring well so that it all dissolves.

Bring the tea jelly mixture to a strong boil and continue stirring. Remove the pan from the heat, and stir in the pectin powder and the optional lemon juice.

Return the saucepan of tea to the heat for another minute or two (as per the pectin instructions). Skim off any scum that has formed bubbles on the surface of the liquid and pour the hot tea jelly into sterile jam jars (ideally just sterilised in a pan of boiling water), so that it can cool down and begin to set.
