Method - What To Do


If you weigh all of the lemons, oranges and grapefruits together, they should weigh approximately 3 lb / 1,300 grams. If you are considerably over or under this weight, adjust accordingly using half an orange or similar.

Photo of GrapefruitsWash all of the fruit thoroughly, to ensure that any waxy outer coating has been washed off completely. Cut the lemons and oranges in half and squeeze out their juice, collecting all of the pips separately. Peel the grapefruit and be sure to remove all of the white pith from the fruit and from the skin. Chop the flesh and finely shred the skin using a sharp knife. Place this shredded rind and chopped flesh into a typical jam making pan, along with the squeeze lemon and orange juice, and the water. In a muslin bag (or similar strainer), place the saved pips and pith, tying the top and adding this to the pot, to increase pectin levels.

Bring the pan to a boil and leave it to simmer for up to one and a half hours, until the peel has become very soft and the overall quantity has reduced to roughly half its original volume, due to evaporation and pulping of the grapefruit. Remove the muslin bag of pips and peel, squeezing it firmly to make sure that as much of this pectin-rich citrus extract has been used.

Photo of LemonsBriefly take the marmalade off the heat and mix in the sugar until it has all dissolved. Place the pan back onto a medium heat and allow it to reach a strong boil, leaving it to boil away until you think you have found its setting point. This should take anywhere between ten and 15 minutes. You can test to see if your three fruit marmalade will set by spooning a small sample onto a plate (chilled in a fridge / freezer). After a minute, it should show clear signs of setting. If it remains runny, continue boiling for longer and then test again using this simplistic method.

Leave the three fruit marmalade to stand for around 15 minutes, so that it thickens. This will ensure that the shredded grapefruit skin will be distributed better in the set marmalade, rather than potentially rising to the top of the jar. Skim off any impurities that have settled on the surface, mix well and then ladle into hot, freshly sterilised jars.
